4th Release Bourbon Cask
Our 4th Release spent its 4.5 yrs in an ex american oak Bourbon barrel. This has provided a nice rounded vanilla nose with a hint of oak and milk chocolate. On the palate the sweet vanilla front leads to robust oak build on the mid palate followed by milk chocolate and hints of coffee. At 46% ABV it is approachable and an open spirit driven delight.

3rd Release Rum Cask
Our Third release whisky is single barrel aged for 4 years and 3 months in a 50 L Columbian rum cask. With a sweet nose with hints of vanilla, caramel and milk chocolate. On the palate sweetness on the front gives way to caramel, creme brulee, milk chocolate followed by some hints of barrel char giving a mild smoke undertone. An easy drinking approachable whisky with layers of interest.46 % ABV 500ML NATURAL COLOUR , NON CHILL FILTERED

5th Release Pinot Cask
This Whisky is a single cask 50L Tasmanian Pinot Noir Barrel aged whisky. Aged just over 5 years it has built a well balanced complex palate. On the nose berry cherry, sweet fruit with hints of chocolate. The palate has an initial fruit, grape front which complexes well as the palate develops into the malt chocolate and lingering darker fruit and fortified wine finish.46 % ABV 500ml Natural colour Non chill filtered.

6th Release Apera Cask
A single 50 L Australian Apera (sherry) barrel aged for 4.5 years has produced a bright and vibrant yet well balanced and complex single malt whisky. Green apples and citrus on the nose with subtle oak notes. The palate is a clean fresh front of apples and grapes leading into some oak and malt chocolate finishing with a rounded sweetnes of Apera. A bold balanced complex spirit with a satisfying warmth from the ABV.50% ABV 500ml natural colour non chill filtered
